Favorite Recipes White Chili



 The first time we had this dinner a friend was delivering it to me after we had a baby.  We had to have the recipe right away - it is so delicious.  Extremely flavorful, very healthy, kid-friendly, inexpensive, and easy to make!  Perfect!  *smile*  I hope you enjoy it, too.  **
For vegetarian modifications, see end note at the bottom.

Note:  A double recipe fits into my large soup pot or crock pot easily, and it freezes and reheats beautifully for another day or as a dinner gift to someone in need. 

* Serves 6-8

Ingredients:
1 T. vegetable oil (I use olive)
1 onion, chopped
1 clove garlic, minced (I use jarred)
1 tsp. cumin

2 chicken breasts, cooked & cubed
1 can (15 oz.) garbanzo beans, drained
1 can (15 oz.) white navy beans, drained
1 can (15 oz.) Hominy (white corn), drained
1 can (4 oz.) diced green chilies
2 jalapenos, minced
1 ½ C. boiling water
2 chicken bouillon cubes
1 C. Jack cheese, shredded


Instructions:
Cook onion, garlic, and cumin in hot oil.


To mince the jalapenos, cut off the top, cut in half length-wise – don't touch the seeds inside with your fingers, they cause a burning feeling that can last for hours! Clean-out seeds underneath running water.  Add chicken, beans (I pour them all in to a colander, rinse them, then add them to the pot all together), corn, chilies, and jalapenos to the pot.  Stir to blend.


Combine chicken bouillon cubes and hot water.  Stir into chili.

Cover and bring to a boil, then reduce heat and simmer for 90 min., stirring occasionally to help break up the beans a bit.  Sprinkle with cheese before serving.


CROCK POT directions:
Combine chicken bouillon cubes and hot water, mix until dissolved.  Pour all of the ingredients into the pot together (except the cheese), no need to pre-cook the chicken (although if you do then you won’t have that white stuff from the chicken in the soup – which we prefer not to have), and no need to pre-cook the onion.  Just mix the oil, cumin & garlic together and pour them into the pot.  Cook on high for several hours; top with shredded Jack cheese and serve.

** Vegetarian modifications:
  • Leave out the chicken 
  • Add an additional can of white navy beans
  • Add an additional can of white corn
