Favorite Recipes Southwestern Egg Rolls With Avocado Ranch Dip Vegetarian dish

Makes 21 Egg rolls, or 48 Won tons

From Chef-In-Training.com

This tasty dinner is absolutely delicious; our family eats every single one every time I double the recipe and serve them; and I've received nothing but the highest praise for the recipe from friends I've shared the recipe with.

Ingredients for EGG ROLLS or WON TONS
  • 2 cups frozen corn, thawed
  • 1 - 15 oz. can black beans, rinsed and drained
  • 1 - 9 oz. pkg. frozen chopped spinach, thawed and squeezed dry with paper towel  (I use fresh)
  • 2 cups shredded Mexican cheese  (I use co-jack)
  • 1 - 7 oz. can diced green chiles, drained  (I use the larger can)
  • 4 green onions, finely chopped
  • 1 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper  (I use 1/4 tsp. and it's still spicy)
  • 1 pkg. of egg roll or wonton wrappers  (I found these in the produce department at Wal-Mart)

Instructions:
Preheat oven to 425 degrees F.  Line 2 baking sheets with aluminum foil and spray lightly with cooking spray.

In a large bowl mix together corn, beans, spinach, cheese, chiles, onions, cumin, chili powder, salt and cayenne pepper.  Using a small spoon, scoop a small amount of filling on to the wrapper.  Startling at a corner, carefully start to roll the wrapper.  When it's slightly rolled, tuck in the two sides and continue rolling to the last point.  Wet your finger with water and dab a bit on the corner to seal the egg roll.  Repeat with remaining wrappers and filling, placing them slightly apart on the baking sheet.

Lightly spray the tops of the egg rolls with cooking spray and bake for 15-20 minutes, flipping them at least once during baking.
If there is any left-over filling, we wrap it up on a whole wheat tortilla later for a delicious snack.

Ingredients for AVOCADO RANCH DIP

  • 3/8 cup mayonnaise
  • 3/8 cup sour cream
  • 3 Tbl. buttermilk
  • 1 1/2 tsp. olive oil
  • 1 1/2 tsp. lemon juice
  • 1/2 green onion, chopped
  • 1/4 tsp. salt
  • 1 avocado
Instructions:
Place all ingredients in a blender and pulse until smooth.  Use immediately.
* I serve this dish with corn chips
* Filling can be made in advance for later, or frozen and finished when ready to eat.
* We've also served these egg rolls with ranch dressing, salsa and sour cream, or BBQ sauce!

Blessings on your family's health,

Garage Time with Daddy

If Dad is in the garage, kids will be in the garage.
Our kids love spending time out there with their Dad, and he loves it when they show an interest in building and creating. Awhile ago, he decided they each needed their own toolbox, so one night while I was working, they helped build their own toolboxes.

Then, he made it super fun by letting them paint! I think that was their favorite part.

When I noticed his bench was tagged, I asked him why he painted the "Daddy." He responded that he wanted to paint too, and so he marked his bench with his name. I don't think the word "Daddy" has ever been so sweet and dear to my heart. Each time I see it, I smile. I love that I married a man who enjoys being a daddy.

Isn't that was parenting is all about?
Enjoying these precious moments with our kids.

back to school with Zappos Stride Rite

I cannot believe we are already halfway through August!  I have seen about half of my fellow world wide web mamas send their babies off to preschool, kindergarten, FIRST grade!  I cannot even imagine fast forwarding a couple years to that moment of Parker and Jolie's (real) first day of school. the twins are going to preschool again this year (they started when they were two) and start back in just a couple weeks.  when I started thinking about preschool-friendly clothing and shoes for them to run and play and get dirty in, I knew we needed another pair of 'go fast shoes' for this new school year.
ahem, that would be sneakers in P+J speak, for the big girls.
I've teamed up with my friends at Zappos.com to share Parker + Jolie's favorite pair of shoes EVER.
literally.
I forced sweet Jolie out of them so she could take a bath and the entire time she was trying to convince me her reasoning for why she needed to wear her neeeeeewww shoes again after she got out.
"mama, I can wear my pink go-fast shoes with my jammies, you know."
gah.  I love her.
of course the bright cotton candy colors of the Stride Rite Leepz caught their eye when I pulled them out of the Zappos box, but when they realized that they LIGHT UP I thought they were going to have a stroke.  I told them their new shoes were for when school starts, and well, that basically opened a can of worms.  they asked me about 11 times between dinner + bathtime + bed if they were going to school "tomorrow"?
I would totally be freaked out if school started tomorrow. and I wish you could hear Parker say tomorrow.  she doesn't have a country girl accent like Jolie's (and J's is thick for some of her words..) but when she says tomorrow, she drops the 'ow' from the end of the word and replaces it with an "ah".
ANYway..
even if I would have waited to the last minute to figure out shoes for school, I would totally be confident in ordering from Zappos- these came in just one day!  ONE!  shipping was fast and free and  their 365 day return policy and helpful customer service would allow me to exchange sizes if I needed to. I honestly kind of took a guess as to what size I was going to get them in sneakers this year..I feel like my kids are in giant sizes, and when I ordered Parker the 10.5 in the Leepz; it was no longer toddler sizing.  *tear.
aside from the twins absolutely loving the look of these shoes, the girls are completely capable in putting the Leepz shoes on by themselves.  how easy is it to tell them to go put their shoes on and they can actually do it without a meltdown of needing me to help them tie the laces.  school encourages clothing and shoes that are functional for little hands (think potty breaks and nap time) to be able to help themselves, and I think these are right up that alley.
we are SO excited for preschool to start!
that.. and any reason to see our new go-fast shoes light up.

thank you Brittany for capturing the color and joy of my sweet girls in your amazing photos and to Zappos.com and Stride Rite for sponsoring this post.

Enhance communication with Transactional Analyis

I caught my words. I knew I needed to apologize.

A couple days ago, Johnny had the day off work. While I took the kids to appointments in Austin, he stayed home to work on our bookcase project (here.) Later that afternoon, when the kids were taking a nap, I went to start a load of laundry, but Johnny so sweetly said he had already started the laundry that morning.
My reaction, unfortunately, was this:
"Did you remember to Oxi-Clean all of the baby's clothes?"
He said he had not. . . to which I replied:
"You have to spray all her clothes, or else the spit up will stain. Her Sunday dress was in that pile, and it needed to be Oxi-Cleaned."
To which he replied:
"Sorry, I thought I was being helpful."
And he walked into the garage to continue working on the bookshelf. (The bookshelf he was building for me. The huge project that I wanted so badly, and he was working so diligently to finish for me.)

Ouch.
Immediately after the conversation I felt ashamed of my words.
How could I have reacted so poorly to his service? He was trying to ease my burdens, and I criticized him for not spray cleaning one dress. I hadn't even said "thank you" to him.
Luckily, he is not easily offended, and my comments didn't affect him, but they definitively affected me. I knew I needed to speak to him with more gratitude and love. I made a point of thanking him and complimenting him throughout the rest of the day.
I am married to an amazing man, and he inspires me to become a better, kinder person.

How often so we say things to our spouse that needlessly damage our relationship (over time)?
How often do we treat our spouse like a child, insinuating that we are the only one who is capable of doing things correctly?

There is a psychological theory called Transactional Analysis, which simply purports that people speak to each other in one of three ways:

When the lines get crossed, conflict can result.
For example, it is typical for parents to talk their children in the Parent-Child format, but an adult wouldn't talk to a police offer as if the officer were a child. Likewise, when someone "talks down" to you, and you feel like they are acting in a condescending manner, it can be hurtful. The Parent-Child format is a crossed line when two adults are speaking. Positive interactions and positive problem solving happens when adults use the Adult-Adult format.

So, when I spoke to my husband as if he were a child (criticizing his laundry methods), I crossed our typical path of speaking to him as a capable adult. It is not my place to be his parent, for in our marriage we are equal partners.
There is a time and a place for disagreeing on topics, but the way we speak can determine whether those problem solving conversations are effective or not. Read more about those here. Again, effective communication happens when we use the appropriate methods.

Think about your communication with your spouse.
Do you "talk down" to him or her? Do your words imply the Adult-Adult format?
If not, change up the way you speak, and find healthier ways to communicate with your loved one.

Playing Dress Up with Princess Cecelia A Giveaway

JustPretendKids

When a representative from Just Pretend Kids emailed me and asked if I wanted to do a review and a giveaway, I had to check out the site first since I hadn't heard of it before. But then I saw that they have a ton of costumes and dress up dresses, and I was in---even though I already had the kids' Halloween costumes. Because princess CC doesn't yet have a dress up dress, and I saw this pink one and immediately knew she'd rock it.
Just Pretend Kids
I can't get over her in this! Such a princess!

Now the Just Pretend Kids clothing is all high-end, made of soft and durable fabrics, without itchy and stiff seams. I figured that ordering a size 4 dress would mean my petite girl would probably swim in it right now but we could get a lot of use over the years. But it's really not TOO big for her now and so I think we'll get even more wears out of it as Princess C grows. Because seriously? The layered, glittery skirt and the rosettes and the sheen? Too much. This is one amazing dress up outfit, no?
Just Pretend Kids

Just Pretend Kids

Cecelia loves twirling in it and started doing that without being prompted---so maybe it's some sort of intuitive thing about a puffy dress on a little girl;) The smile on her face when she wears this dress pretty much says it all---miss hard-to-please is a big fan.

Every night I tell the kids one story that involves 'CC Princess and Prince Truman'----I've done this for many months. But now I specify that CC Princess wears her beautiful pink dress in this story. She eats it up, of course.
Just Pretend Kids

And the details are pretty incredible.

Cecelia loves this dress and it does seem quite soft and comfortable, not too heavy or stiff. It's poofy but not difficult for her to walk in, and she loves the sash and rosettes the most. I really can't get over how *pretty* she looks in this dress and when I texted Nate a picture of her in it, his first response was 'she looks so big!'. Because she does! And it has to be said: little girls are so much fun for things like this. She isn't the most 'girlie girl' but she plays the part in this dress!

Cecelia was all about going outside with me for this photoshoot, posing away and showing off her smiles. Until the end when she was just ready to go back inside and I demanded one more picture...
Just Pretend Kids

That's my girl with her classic 'displeased' face I'll never forget!

When Just Pretend Kids emailed and asked if I would do this review, I said that I really prefer to do a giveaway for my readers along with posts like these. They were kind enough to offer a discount code for $20 off the item of your choice, to one winner. I'm thinking lots of little girls would love a dress like this as a Christmas gift, but there are really adorable costumes (for boys and girls and BABIES) and fairy wings and tutus, too. And if you don't win the $20 giveaway, you can still get 25% off your order by signing up for their mailing list.

But to enter the drawing for the $20 off, hit the Rafflecopter below. I will email the winner next week and will update this post then, too. Good luck!
